If you’re looking for a simple, tasty, healthy burrito – I found two. Great for breakfast, lunch or dinner. First one has hard boiled eggs, bell peppers, tomatoes and cheese on a multi-grain tortilla. Second one has hard boiled eggs, bell peppers, avocado and cheese on a multi-grain tortilla. These were easy enough to prepare ahead of time. For the avocado, I made sure to squeeze some lime on it when putting it in a container so that it wouldn’t turn brown as quickly.
These could easily be put together the night before then quickly heated up in the microwave for breakfast, lunch or dinner! Or you could even eat them cold.
